Short post but wanted to share cuz I made one today & it's one of my fav's recently. It's a kale salad I saw on this Engine 2 documentary on Netflix. It's really good for you cuz I found out kale is super awesome - basically blows every other leafy green out of the water when it comes to nutrition or something like that. Kale by itself has a very cabbagey taste to it, which I don't care for raw, but with the "dressing" you can't really taste it.
1 large bunch of kale (use the whole thing, it'll fill the bowl & you'll think you have too much, but once you add the avo. & everything, it comes down in size considerably.)
2 avocados (ripe, obviously)
1 lemon
garlic salt
wash the kale very well. I put mine in a bowl & let it fill with water, swishing the entire bunch around before I do each leaf individually under running water as I pull the leafy part off the stem like you would chard. It's very sandy for some reason & if you aren't meticulous with this part, you'll get grit & it ruins the entire thing (though kale is hearty enough you could rinse & try again if you really want to). Once that's done, try to get as much of the moisture off as possible (I'm not above using a clean dish towel or paper towels) so your "dressing" sticks & doesn't turn watery. It's not nearly as yummy if all the good stuff pools at the bottom.
"infuse" (as the Engine 2 guy calls it) your kale with the avocados & lemon juice. This is why I've been putting "dressing" in quotations ... not really a dressing in the traditional sense. Basically, pit & peel your avo's & dump them in the bowl with the kale. Squeeze the juice of your lemon in, being careful of seeds & squish it all together in your hands as if you're a kid with playdoh. Mash it up until it's covering all the kale (you'll see what I mean about it reducing in size now) & your hands are green. Mmmmm. Tasty!
Add garlic salt to cut a bit of the acidity from the lemon juice, mash more / toss the salad & taste to see if you need to add more. I suppose you could do this part in the beginning with the avo's & lemon juice to save yourself from having to wash your hands twice, but I do it after cuz I'm afraid of getting carried away with the salt. I dunno. Whatever works for you.
In my house, this much feeds 2 people (cuz I'm nice for even sharing at all & could eat it as an entire meal all my myself) but I suppose if you're above sticking someone with your fork to keep them out of your bowl & it's only a side dish, you could stretch it a bit further. Well there you have it! My short post that turned into a long one. Oh well. Hope you try it & love it as much as I do!

ReplyDeleteThat sounds delicious! And just a note, there is curly kale and Tuscan kale. tuscan kale is not quite as bitter and is a bit sweeter. They don't have it a meijer, but they do at kroger. I like to use that kale in salads.
